It’s summer, the end of, with crickets chirping and tree frogs, aka Pacific chorus frogs, coming right up onto my deck. I found a tiny beauty on a side table the other day. That’s quite a jump for a small critter. “Think of them as your guardian animals,” my brother advised me. I purely love the idea. I feel like I need a guardian animal with all the distress in the world. Pender Island has been spared the worst of the smoke this summer, but the days are still weird, hazy, with red sun.
This visitor was very folded into herself.
Here’s a gift for you, my most-asked for recipe. It probably has little to do with poetry and a lot more with the magic Jorrie series and the wonderful Geranium Lodge where Valdi and Auntie Runa reign supreme in the kitchen. Don’t we all need good care and feeding right about now? These are really delightful!
Chocolate raspberry muffins, 12 muffins, 375 degrees, silicon muffin pan is best
2 tbsp chia seeds
1 rounded tsp ground psyllium husk
soak in 1/2 c unsweetened oat milk for 10 minutes
1 c sugar
¾ c organic cocoa powder
1 1/3 gluten-free flour mix
1 1/3 c ground almonds
2 tsp baking powder
1 tsp baking soda
½ tsp salt
4 eggs
1/3 c avocado oil
1 tbsp cider vinegar
1/2 c oat milk
2/3 c dark chocolate chips
1 c fresh or frozen raspberries, chopped
· In small bowl, mix gf flour, ground almonds, baking powder, soda, salt, sieved cocoa powder, sugar.
· Beat eggs, milk, oil.
· Add chia seeds and psyllium mix and beat.
· Add dry ingredients to big bowl with liquid. Add choc chips and raspberries. If mix is too thick, add a bit more liquid but not much. Bake around 27 minutes or until browned and smelling wonderful. Do not overbake.
